Caprese Salad Recipe

Okay, to be honest, this isn't so much a recipe as a general set of suggestions :-)  Caprese salad is just about the easiest composed salad out there.  It has only a handful of ingredients, so be sure to find the freshest, highest quality heirloom tomatoes and fresh mozzarella in order to maximize the flavor.

Caprese Salad
2-6 heirloom tomatoes (depending on size)
A couple of ounces of fresh mozzarella (the kind that comes in water and looks like this.  Do NOT get the stuff that Americans put on pizza...it's not the right kind and will taste terrible in this salad).
A handful of fresh basil leaves
A couple of teaspoons of olive oil
Salt and pepper to taste


Wash and thinly slice tomatoes.  Tear the basil leaves into large, coarse pieces.  Drain and thinly slice the mozzarella.  Layer tomatoes, basil, and mozzarella on a plate, then drizzle a layer of extra virgin olive oil over the top.  Season with sea salt and freshly ground black pepper.  Serve with slices of toasted sourdough bread.  Enjoy!
